Two cups of whey in this batch add a massive 160 grams of pure protein meaning each cookie gives you nearly 19 grams of protein.

The Recipe (Makes 10 Cookies)

Ingredients

  • 2 cups whey protein powder (one vanilla or choc flavour, one natural/no flavour – I used protein powder from Nothing Naughty for this recipe)
  • ¾ cup almond flour (I used the “Oh So Natural” brand from Coles)
  • ¼ cup monk fruit sweetener (I used the “Whole Earth” brand from Woolworths
  • ½ tsp baking soda
  • ¼ tsp Lake Deborah mineral salt (I used the Living Valley salts – click here)
  • ⅓ cup melted coconut oil (or butter)
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2–3 tbsp water/almond milk (adjust for texture)
  • ⅓ cup total chocolate chips — half sugar-free white (Noshu from Woolworths), half regular milk chocolate (Choceur Baking Bits)

Instructions

  1. Preheat oven to 175 °C / 350 °F. Line a baking tray with a silicone baking mat.
  2. In a bowl, whisk together whey protein, almond flour, monk fruit, baking soda, and mineral salt.
  3. In another bowl, whisk eggs, melted coconut oil/butter, vanilla, and almond milk or water.
  4. Combine wet and dry mixtures until a soft dough forms.
  5. Fold in your mix of chocolate chips.
  6. Scoop into 10 evenly sized cookies, flattening slightly.
  7. Bake 8–10 minutes, until edges turn golden.
  8. Cool completely before transferring to a rack — they’ll firm as they cool.
